It will crystallize over time, but it's won't mold. Honey has a such a high level of sugar and it reduces water activity, thus reduced bacteria growth also. I'm guessing that since you have unpasteurized honey, it's simply the particles you think it is...wax, pollen or even some crystallization.Mar 29, 2010
