very rare I think, but there is a disease you can get with cleaning rabbits in the summer, tularemia, safe to eat cooked but the blood getting into cuts or something is bad. SQUIRRELS LESS OF A CONCERN but, hey guy, just another reason not to hunt em out of season plus reasons above.
