To disable Apple's Predictive QuickType Keyboard option navigate to Settings > General > Keyboard. Tap the "Predictive" slider so it turns white / OFF. From here you can also disable features like Auto-Correction (if you're brave enough to try to spell on your own) and Auto-Capitalization.
